| Ciao from your Local Goodie, Panzanella! With the switch to daylight savings time on Sunday, March 11th, we will have some welcome outdoor time in the evenings very soon. The birds are making exuberant spring music and the garden is calling. When the Carrboro Farmers' Market reopens on Saturday, March 24, it really gets inspiring. We can hardly wait. Mmmpizza...! Why is our pizza is so delicious? Not only do we use great ingredients and dough prepared by the Weaver Street Bakery (conveniently located next door to Panzanella), but we also have an oven that creates, as much as possible, the high temperatures and even heat necessary to produce a good crust quickly without drying out the top of the pie. | Mmm—pizza...! continued | |||
Our pizza oven is a Chandley deck oven, manufactured in England, and originally purchased as Weaver Street Market's first bread oven back in 1993. It is electric, which surprises many people, with heating elements about the size of a garden hose both above and below the stone-covered deck. The "stone" is actually refractory firebrick, like that used in a kiln, and pizzas are baked directly on this very, very hot surface. Because the stone is so massive, once it heats up, it continues to radiate the heat, holding the oven temperature where it needs to be, even when the oven is filled with room temperature loaves of bread, or the door is opened frequently to load and unload pizzas. Our Chandley had a full and noble life, doing its part to create the legendary Weaver Street breads. And when the bakers outgrew the Chandley in 1999, this amazing oven moved on to a new life as a mainstay of the Panzanella kitchen—roasting vegetables, toasting bread, and most of all, baking pizzas. |

Our March Wine Dinner featuring the wines of Tuscany has completely sold out!But, tickets are on sale now for April's Wine Dinner: The Wines of the Loire Valley. The Loire is the wine region that flanks France's most famous river and produces wines known for their delicate, subtle style such as sweet wines from Vouvray, delicious and elegant reds from Chinon and Champigny, and the numerous refined whites and sparkling wines from places like Touraine and Saumur. The names alone conjure up images of rolling hills, views of the spectacular Loire River, and Renaissance era castles, spires and villages. The grapes grown in this region are Melon de Bourgogne, Sauvignon Blanc, Chenin Blanc, Cabernet Franc, Pinot Noir, and a few other, more obscure varieties. These wines are incredibly good food wines, with their ample acidity and expressive fruit flavors. Join us for this tasting tour and find out what this vast wine producing area has to offer. A delicious meal from Panzanella's kitchen will be served, specially prepared to complement these wonderful wines. Wine Dinner tickets cost $40 per person.
